String Theory has provided us with a large class of solvable toy models of strong coupling dynamics. These holographic toy models provide valuable insights whenever the real physical system is beyond our ability to do controlled calculations. I'll review important insights that have been gained using this tool regarding viscosities, energy loss, non-Fermi liquids, and non-equilibrium physics. I'll discuss to what extend these theoretical developments can be used to explain experimental data from the heavy-ion experiments at RHIC or LHC, as well as the phase structure of high-Tc superconductors or other strongly correlated systems.
