The Kardar-Parisi-Zhang stochastic PDE is predicted to be a universal model for many interface fluctuations. This universality was proved for a large class of SPDE interface models, but for height functions of interacting particle systems there has been minimal progress beyond integrable or stationary models. In this talk, we discuss recent progress towards proving this universality conjecture for some families of non-integrable and non-stationary exclusion processes. The approach we take is based on a model-independent and non-stationary "local" Boltzmann-Gibbs principle whose applicability is of interest beyond KPZ.
